Chef Daniel Traimas is the Executive Chef at Cobalt Restaurant at Kimpton Vero Beach Hotel & Spa. An Illinois native, Traimas was exposed to the restaurant world at a tender age by working in the kitchens of his family’s various restaurants. At seven years old, Traimas was a master at rolling a traditional spring roll, and by age eighteen he had a steady gig cooking at his parents’ Thai Addison restaurant in Addison, a village west Chicago. Driven by his passion for food, Traimas went on to receive his culinary arts degree from the prestigious Kendall College in Chicago specializing in French technique. Upon graduation, he accepted a position at Arun’s Restaurant in Chicago whose namesake and James Award-winning chef Arun Sampanthavivat taught him the discipline required to work in fine-dining.
After a stint as Executive Chef of EUREST Catering and consulting for friends, he was lured by the famed North River restaurant Sable Kitchen and Bar where he honed in his skills as Sous Chef. On January 2016, Traimas joined the team at Cobalt Restaurant at the beautiful beachfront resort, Vero Beach Hotel & Spa in Florida. Chef Traimas aptly incorporates his flavorful Midwest cooking style, classic American cuisine and ethnic flavors into Cobalt’s menu, elevating the restaurant’s comfortably elegant American seafood approach. Cobalt’s menu showcases his love for fresh local ingredients letting his creativity shine. Whether catering to celebrities or locals, chef Traimas does it all with passion and a smile.
